Sevruga Caviar is a mighty caviar with pronounced flavor. Made of the roes of Starry sturgeon fish (Acipenser stellatus), also known as stellate sturgeon, Sevruga Caviar can only be harvested from Starry fish farmed for at least 8 years. The size of Sevruga Caviar is the smallest among the caviar we offer, namely Beluga Caviar, Deluxe Osetra Caviar and Siberian Caviar, in around 2.2 mm in diameter.
The color of the roes is ranging from slate grey to charcoal, with a touch of pearliness.
How It Tastes?
Sevruga Caviar is distinguished by its pronounced and thick flavor, which is often described as saltier than other kinds of caviar.
The delicate and soft texture melts almost instantly between the palate and tongue, followed by creamy and buttery notes and long-lasting, pure aroma of the sea.

Native in the Caspian Sea, Starry sturgeon fish (Acipenser stellatus) can only grow to round 25 kg, which is described as the most bijou breed of all the sturgeon species. Starry sturgeon fish usually reaches an age of 22 - 25, and the maximum reported age of this species is 27.
In the past during the golden age of wild fishing in the Caspian Sea, Starry sturgeon fish is the most commonly found and widespread sturgeon. However, due to overfishing, it has been considered critically endangered by the International Union of Conservation of Nature (IUCN) and international trades of Starry sturgeon and its roes, Sevruga Caviar, is restricted by CITES.
