Siberian Caviar, also known as Baerii Caviar, is a unique yet versatile caviar. Made of the roes of Siberian sturgeon fish (Acipenser baerii), which takes up to 8 years to reach maturity for harvest, the size of the Siberian Caviar is around 2.5 mm in diameter.
The color of roes is ranging from mahogany to dark brown, with a touch of glimmering.

Originated in Siberia, Siberian sturgeon fish (Acipenser baerii), which can grow up to two meters long, inhabits in all of the basins of Siberian lakes and rivers draining northwards into East Siberian Seas, Kara and Leptev.
